Curly fries at Memphis Wings, Casula

Memphis Wings, Casula

It’s like I’ve waited my whole life….

Sorry for the melodramatic opening but I’ve wanted to write this review all week and I finally got the opportunity to go today. Ever since I read Bite Me Show Me’s review, I knew a vicarious experience wasn’t going to be enough. I couldn’t just admire from afar, I needed to hop in the iFat mobile and find out for myself.

Today, I drove forty minutes to Memphis Wings in Casula.

Kids, never drive hungry. I left the house peckish and was ravenous by the time I pulled up in the parking lot of Memphis Wings. It’s located just off Hume Highway and opposite a Costco. I completely forgot that today was the start of a long weekend and was surprised at how many people were in there during a non-lunch/dinner rush.

Memphis Wings has a range of soft drinks that can only be found in America. I opted not to try any of them since I’m still kind of watching how I eat and drink. I knew today would be a huge violation so I thought I’d limit the damage.

Oh and what glorious damage it was.

I took a look at the menu but I felt like I always knew what I was going to order.

First up was a beef brisket combo.

Well, this was quite the doozy.

I picked the burger up and immediately the sauces started dripping into the basket. This is the type of burger you have to finish all at once. It’s impossible to put down; I will refer to it in the future as the culinary equivalent of the Harry Potter series. The brisket was bursting with flavour and I loved how well the coleslaw went with the cheese and ranch sauce. The bun left a little to be desired but it wasn’t soggy and served its purpose of housing its delicious innards.

I’m a sucker for novelty. Curly fries fit that description. They were seasoned with chilli salt and were pretty good. I ordered two meals (for the people!) and was unaware that the wings also came with fries so I left a lot of food on the table.

Curly fries, I’m sorry for abandoning you.

On to the wings.

Story time with Isaac: There was a couple seated next to me that ordered the same wings with a different sauce. Memphis Wings offers something they call ‘ass burner hot sauce.’

Don’t believe me? Check it out on their menu HERE. Once their wings arrived, the guy picked up one wing and devoured it within seconds. It took a little while to kick in, but he was sweating before long. The staff actually came around and asked him if he wanted some milk but the poor guy revealed that he was lactose intolerant. The staff laughed and then the chef came out from the kitchen and immediately offered his sympathies. He said something along the lines of:

Mate, I cook them but I never eat them. I like using my tongue.’

I had a very entertaining meal and thankfully a fully functioning tongue. The BBQ sauce was sweet but not to a sickly point and marinated the tender meat brilliantly. The six drumettes were small but I was already wobbling on my chair after eating the burger. After demolishing my wings, I sat there for a little bit patting my food baby and watched as my poor neighbour wanted if soy milk would work the same way as regular milk.

Here’s the TL; DR for everyone who just wanted to see my photos

– Never drive hungry

– Beef brisket burger is the way to go; I’ve also heard food things about the pulled pork sub.

– Don’t get the chicken wings with ass burger sauce unless you have some dairy nearby.
